10 oz honey
6 cups filtered water, hot
2 cups lemon juice, freshly squeezed
2 2/3 cups cold water
2 cups strawberries, hulled
Mix honey with 6 cups of hot water until dissolved. Set aside to cool in a large pitcher.
In a separate pitcher, combine lemon juice & cold water. Pour half of the lemon mixture into a blender or Vitamix. Add strawberries and ~2 tbsp fresh mint. Blend until smooth. Combine all the liquids together in one large pitcher. Place in fridge until chilled. When serving, garnish with mint and lemon wedges.
